White Chocolate Cranberry Drop Cookies

A new Christmas cookie favorite – these Cranberry Drop cookies have white chocolate throughout and are super easy to make!

This is a festive cookie for sure, with it’s red bursts of dried cranberries and little chunks of white chocolate, everyone will enjoy this updated drop cookie!

Christmas cookies are one of my specialties, I have after all been baking them by the dozens since I was about 10 years old.

I find that people love anything with cranberries at this time of year – and I can’t blame them. They are bright and festive and they add a lovely tartness to any sweet cookie recipe.

Cooking time: 10 mins

Makes: 24 cookies (more if you make them smaller)

Ingredients

  • Butter 
  • Brown sugar
  • Granulated sugar
  • Eggs
  • Vanilla extract
  • Flour
  • Salt
  • Baking soda
  • Dried cranberries
  • White chocolate chips

This recipe was adapted from Taste of Home , though we omitted the frosting as it made them far too sweet for our liking, and also more difficult to make ahead and freeze for our Christmas trays.

White Chocolate Cranberry Drop Cookies

Total Time 15 minutes

Ingredients

  • 1/3 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup dried cranberries, coarsely chopped
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 375°F.
  2. In large bowl (mixer) beat together butter and sugars until it is crumbly. Beat in egg and vanilla.
  3. In a separate bowl sift together the flour, salt, and baking soda. Gradually add to butter mixture and mix well.
  4. Stir in cranberries and chocolate chips until just combined.
  5. Drop by heaping tsp onto a greased (or parchment lined) baking sheet.
  6. Bake for 8-10 minutes until cookies are lightly golden around the edges.
