The winter months are all about comfort foods for us, and nothing hits the spot like a great bowl of stew! This Moroccan Chicken Stew is full of robust ingredients like cinnamon, sweet potatoes and fresh cilantro, which makes it a tummy warming dish that your whole family will love.
I know when most people think of a Stew recipe they first think of Beef, but let me assure you that this Chicken Stew is not only quick and easy, but it is full of healthy ingredients and flavors that will leave you wanting a second and third bowl! In the winter months we tend to make dishes like our Beef Stroganoff and Chicken Pot Pie quite often, but I really wanted to try something different and couldn’t be happier with how this Moroccan Chicken Stew turned out.
For this recipe you will need:boneless skinless chicken thighs, sweet potatoes, fresh cilantro, onion, chicken broth, flour, olive oil, ground ginger, cinnamon, lemon juice, couscous, saffron (optional), salt & pepper.

Back to school is right around the corner where we are, which means it is time for EASY weeknight meals that the entire family will love! This Lemon Chicken Piccata is super simple to make (with just a few ingredients) and has a flavor that will blow your mind. It is one of my go-to meals for a busy week when my hubby and I just don’t feel like spending much time in the kitchen. Take a look for yourself at how delicious it is.
Another reason I love this dish so much is its versatility, you can use chicken breasts or thighs and you don’t need to worry about the bones if you want to serve it a little more rustic I say go for it…who is gonna judge you?! Just remember to adjust your cooking time if you choose thighs or a bone-in chicken breast as it will take a little bit longer to cook through. Ready to get started?
Prepare your chicken for dredging by cutting it into smaller sections and gently pounding out with a meat tenderizer (or rolling pin) you want your chicken to be very thin so it cooks quickly. In a low sided dish mix together flour, corn starch ,garlic powder and a pinch of salt and pepper.
In a large skillet heat 2-3 tbsp olive oil (or oil of your choice for frying) over medium heat.
Coat each piece of chicken with your flour mixture, gently shaking off any excess, and put aside on a plate. When all pieces are coated, begin cooking them. Be sure to let them cook 2-3 mins a side and flip. Repeat until all chicken is cooked (we normally do it in 2 batches).
Remove chicken from the pan and set aside.
Reduce heat to medium-low and add in wine, water, lemon juice and capers. Scrape up any bits from the chicken and let your sauce come to a low simmer. Add the chicken back into the pan with 1/2 of your chopped dill and let cook 2 mins until sauce is thick.
Arrange chicken on a serving dish and top with the rest of your dill and lemon zest.
If using chicken with the bone in still be sure to adjust your cooking time, it will take longer to cook through.
Easy weeknight dinner, ready in 30 minutes, this Lemon Chicken Piccata is simple to make and loaded with flavor!
Lemon Chicken Piccata is also a great meal for entertaining, people will think you spent hours in the kitchen with the depth of flavor that it brings to the table, and you can really pretty it up on a nice serving tray! Get ready to have your mind blown, this Butter Chicken Poutine is not your “normal” poutinerecipe…no no, I decided to use Naan Bread as my fries! Oh ya, you definitely read that right, and you are going to want to grab a pen and make your shopping list now because this recipe is AMAZING!
So, what sparked this GENIUS IDEA you ask?! Well, as part of one of my blogging groups there are monthly challenges using a specific recipe item or dish, in this case it was Naan Bread, we then create a dish and share within the group so that everyone can see what was created. When I first saw the idea I thought “Pizza! We do Naan Bread pizzas weekly in our house…so quick and easy…” but then I thought I wanted to go further with it and give you guys something you haven’t seen before. And that is exactly what I did! Look at it, so gloriously yummy!
Not only is this recipe full of flavor, but it is actually really, REALLY easy to make too! The butter chicken is placed on top of the crispy Naan Bread (don’t worry I’ll tell you how to do this too) and then smothered in cheese and cilantro. What isn’t there to love about this dish?! Every single bite that you take leaves you wanting more…it’s a good thing this recipe makes enough to serve 4 dinner sized portions!
1jar Butter Chicken SauceI used KFI but you can use any one you love!
Salt and Pepper
Cut chicken into cubes and cook according to directions on sauce (generally, you pan fry chicken until browned, add sauce and cook for 5 mins on low simmer)
Set oven to low broil and place 3 Naan Bread inside (**Keep an eye so they don't burn!) flip after about 2-3 mins when they get slightly crisp and broil additional 2 mins.
Cut Naan into "fry sticks" and set aside.
In a small bowl assemble ingredients as follows: Naan fries, Butter Chicken, Cheese Cilantro. Have fun and add as much or as little for the above ingredients!
There are a couple things I am already thinking about for the next time we make this too! First, I would love to try it with some plain Greek yogurt on top, or even some crumbles of goat cheese. I think this would give it a really nice tangy flavor! Also, I would love to try it with actual cheese curds (these are traditionally used when making poutine!). With that said, this dish is incredible just as it is, and I know you will love it too!
