It’s almost time for the biggest game of the year for football fans and with that comes plenty of delicious game day dips and foods for you to indulge in! You can always find me around the food table at these gatherings rather than in front of the TV (unless it is basketball!) and I am not ashamed to admit it…you’ll see for yourself after checking out the dip recipes below what I am talking about friends!

Time for another Featured Recipe from my fellow blogger Dee at Dee’s In the Kitchen! This time it is a Fall classic, a stick to your ribs, warm you to your toes, Crockpot Chicken Chili. It is full of vegetables and protein, and the best part is that you can set it and forget it. You can prep everything the night before and get this started before you go to work. Just set your slow cooker to low for 8 hours and have dinner ready and on the table as soon as you get home. Now that’s my kinda meal! This is one you will make time and time again, and you can even freeze your leftovers and heat em up later in the week (woohoo 2 nights without slaving over your stove to get dinner on the table).

Slow Cooker Chicken Chili

A delicious Chicken Chili that you set and forget!! Ready when you get home to go straight on the table for a hearty Fall meal!

Slow Cooker Chicken Chili

Ingredients

  • 1 Yellow or Orange Pepper seeded/chopped
  • 1 Red Pepper seeded/chopped
  • 2 Jalapeno peppers seeded/chopped
  • 1 Cubanelle Pepper seeded/chopped
  • 1 Large Onion, Chopped
  • 1 Cup Corn, cut off cob, thawed
  • 2 Cans 15.5 oz ea., Cannellini Beans
  • 1 Container 32 oz, Chicken Broth
  • ½ Cup Light Cream
  • 3, Chicken Breasts boneless/skinless, chopped
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon of each Seasoning: Dry Whole Oregano Ground Cumin, Ground Ginger, Garlic Powder, Chili Powder, Onion Powder and Kosher Salt
  • Black Ground Pepper few good turns on the pepper mill
  • ½ Cup Cilantro, cleaned/chopped

Feeling a Little “Chili”?

I don’t know about you guys, but I CAN’T believe that it is November already! That means it is only going to get colder, and with the sun setting earlier we are going to start feeling those winter blahs soon enough. Christmas decor and gift ideas will soon be filling all the store shelves, and snow will be making our drives a little bit longer and a lot more stressful.

Lucky for you I recently decided to be a little more adventurous with a classic recipe  and created the most delicious Chicken Tortilla Chili! It is sure to be a new family favourite for the cold nights ahead, and you can even make it in the crockpot so it’s ready when you get home.

There are a few shortcuts you can take if you are running low on time (or patience) and with just a few simple ingredients it won’t break the bank. It makes a heaping pot of chili, more than enough to feed a family of 4 at least two times…see the recipe for my spin on what to do with the leftovers for a fun family meal the next day!
