Salted Caramel Hot Chocolate + Spiked Version!

Well, another month is upon us friends, and that means it is time for another Recipe Swap!!! This month I was given Simply Made Recipes, which you guys should recognize as Amber has been a part of our “Featured Recipes” section a couple of times, so it is no surprise that I knew exactly what I was going to make. With it being so close to Christmas, and the weather getting cooler, I chose to make her Salted Caramel Hot Chocolate recipe…and boy are you guys in for a real treat!!

Spiked-Hot-Chocolate

This is the perfect drink for you to enjoy after a day out on the toboggan hill (or ski hill if you are adventurous enough!). It only takes 5 minutes to make and is a big enough batch to serve 6, which is great for all the excited kiddos and adults alike. Now, with me being lactose intolerant I chose to make a couple of adjustments to the recipe and I can tell you it is still INCREDIBLY tasty and you will not miss out on the heavy cream etc if you choose to make it this way instead. I also have a curious hubby who thought it would be a good idea to “spike” his cup…and boy was I GLAD that he did! I mean YUM, a little shot of Smirnoff Fluffy Marshmallow Vodka will leave your taste buds dancing. Anyway, here you have it, the BEST Salted Caramel Hot Chocolate Recipe you will try all year, with an adult version for those of us who like a little kick!

Salted Caramel Hot Chocolate + Spiked Version!

A delicious drink for a cold winters day! It is an indulgent treat topped with whipped cream and caramel sauce, it's your new go-to Hot Chocolate Recipe!

Ingredients

Hot Chocolate

  • 2 Cups Milk Chocolate Chips
  • 3 Cups Milk we chose to use almond milk
  • 2 Cups Half and Half
  • 1/4 Cup Caramel Sauce
  • 1/2 Tsp Sea Salt

Topping

  • Coconut Whipped Cream
  • Chocolate Chips
  • Caramel Sauce

Instructions

  1. Combine ingredients for the Hot Chocolate in a saucepan over medium heat.
  2. Whisk constantly until all ingredients have combined and continue to cook over medium heat until desired temperature (about 5 minutes).
  3. Pour into cups and top with whipped cream and desired add-ons!
  4. *add in a shot of your favorite vodka for adult version! We used Smirnoff Fluffy Marshmallow.
tips and tricks for the perfect salted caramel hot chocolate
  • Keep the temperature no higher than medium when whisking together the ingredients (this will keep the chocolate and caramel sauce from burning)
  • Use less caramel sauce if you don’t like your drinks too sweet (this is a very sweet and indulgent drink) I think next time we make it I would use half the amount the recipe calls for
  • If you want to try something different, you can always use a semi-sweet or dark chocolate rather than the milk chocolate chips
  • You can use regular whipped cream, or even chocolate whipped cream (yep they make it!) if you don’t like coconut…but let me tell you it is DELISH!
  • Have fun with your toppings, let the kiddos have a choice from a few goodies they can add on. My suggestions? Chocolate Chips, Marshmallows, Toasted Coconut, Peppermint Chips, and anything else your heart desires!

Foodie Friday (ish)~ Sparkling Unicorn

Ohh what lovely weather we are having, I am addicted to this sunshine (even though I know it won’t last…rain is in our near future). I had to share this post a day early, that way you can make sure you have everything you need to MAKE IT!

This past weekend was mothers day and I decided to host my momma and sister for an afternoon brunch, loaded with yummy food and a super tasty new drink!

Honestly is there a better way to show someone you appreciate them? I mean…food and DRINKS!?  It was such a giant hit that I brought all the stuff to make them again the next day for lunch with my in-laws…again, LOVED by everyone! Gosh I just love when a new recipe takes off with success, I cannot wait to restock some of my ingredients so I can make it again all summer (and I am already thinking of great variations!).

Sooo, let’s start with a shot of our yummy brunch…

I bet I know exactly what you are thinking…What on EARTH are those red things in the drink?! We will get to that…for now all you need to know is that it is a 3 ingredient drink that you can enjoy all summer! It is so incredibly light (and fizzy) and is super refreshing. We all had a second glass (or more…) that’s how yummy it is! And if you don’t like a boozy drink than this is DEFINITELY  for you! You can’t taste the alcohol in it at all! Uh-Oh!

With Spring comes BIG changes!

With the gorgeous temps today I feel inspired to share with ya’ll one of the projects going on in our household this past month! I don’t know about you, but warmer temps combined with glorious sunshine make me motivated to tackle the biggest projects in the house (typically ones that I have pushed under the rug for 5-6 months!).

Before the holidays my hubby and I had discussed the idea of “gifts” and what we wanted to do (we ALWAYS set a budget…I guess that comes from working in the financial industry for me). And this year we both decided that we didn’t want to “waste” our hard earned money on things we would just put into a drawer and pull out in 5 years when we do a garage sale…so what did we decide to do? A “custom-built” walk-in closet! Ooo, this was something I had wanted for years, and knew it wouldn’t be too difficult to convince my hubby (I may have used the “If we get the closet done just think of how much more space YOU will have, my stuff will be soooo organized it’ll leave tons of room for you!“). It isn’t that far of a stretch…I SWEAR he does have more room now…I just still have MORE 🙂

I will be doing the final post/page in another week or two, I am just getting the final touches (i.e. nicer bins for storage, shoe bins, tie holders etc)…if you’re gonna do it you may as well do it RIGHT the first time!

Party Time!

With it being such a gloomy day today, I thought I would reach back in my vault of crafts a little bit and share with ya’ll how to make a fabulous Birthday Number out of paint chips!

This was a task I had taken on for my nieces 2nd birthday back in October, telling my sister in law I wanted to make a special number for her cake and goodie table. The theme was Bubble Guppies so I went with nice hues of blue for the ocean effect…I think it turned out GREAT! And do you want to know the best part? You only need to buy one thing…yup ONE! Christmas Lantern

One month left until Christmas! I decided this past weekend that I was going to start to decorate (which is actually early for me!) as we have a Christmas party coming up and I really didn’t know when else I would have the time to get the house together!

While going through my decorations I came across some of the mesh tule that is so frequently used in wreaths at this time of year, as well as outdoor decor and knew right away I wanted to use it. Mine was a nice purple, left over from a couple of years ago when I did a Grinch themed tree and needed to make a fun tree skirt! (You can find it in any colour you can imagine).
