These Chocolate Chip Scones are incredibly easy to make and are the perfect addition to breakfast or brunch. They are loaded with chocolate chips but are not overly sweet, and are dense enough for slicing open and adding some butter, making them easy to pair with your morning cuppa tea. 

Don’t be scared off by the term scone, I promise you they are so much easier than we believe them to be! They come together in under 10 minutes and will then fill your home with the delicious sweet smell of chocolate and butter while they bake away. 

For this recipe you will need: flour, baking powder, sugar, butter, milk, egg, vanilla and chocolate chips.

Instant Pot Butternut Squash Soup

Sweet and nutty with a hint of curry, this Butternut Squash Soup is bursting with flavor and is so easy to make! Chop, dump and puree that’s all you do and 25 minutes later you have a creamy and full bodied Butternut Soup that is to die for.

As you can see below, it has a gorgeous orange color which helps to brighten any dull winter day, and I can promise you once you have a spoonful you will be hooked on its sweet flavor with hints of spice!

Soda Bread Muffins with Cheddar

Soda Bread is a classic quick bread that we tend to enjoy around this time of year, specifically for St. Patrick’s Day. While I love the classic bread I thought it was time to give it an update and decided on muffins which have a lighter texture but all the flavor you already love (plus more!).

Curried Lentils “Stew” with Rice

A 20 minute vegetarian dinner that the whole family will love! Our Curried Lentils use canned lentils and strained tomatoes along with delicious Indian spices to create a wonderfully aromatic curry dish you will make time and time again. 

There is something about a good meatless meal that I just love! Curried Lentils are a super quick and easy way to incorporate more legumes into your diet while keeping the flavor game strong. I promise you there is nothing boring about this dish! If you’re not used to cooking with these delicious little parcels of flavor, don’t worry. I am going to provide you with some tips and tricks on how to enjoy this easy Lentil Curry without spending your entire day at the stove. 

For this recipe you will need: canned lentils, onion, strained tomatoes, cilantro, curry powder, ground ginger, garam  masala (see recipe for alternative), cayenne pepper, salt and vegetable oil. Rice for serving is optional.

Easy Chocolate Apple Valentine Treats

Looking for something to wow your sweetheart this Valentine’s Day? These Chocolate Apple Hearts are easy to make and are the perfect Valentine Treats for those you love most! We used a heart shaped cookie cutter for their shape and then dipped  them in luscious milk chocolate before topping with candies, coconut and more.

I am all about spreading a little extra love for Valentine’s Day, but that doesn’t mean it has to break the bank. In fact, after recently completing a basement renovation, my hubby and I decided to stick to gifts that are made from things we already have rather than going out and spending ridiculous amounts of money on shiny things neither of us need.

Now I know the way to his heart is definitely through his stomach, and anything with chocolate gets me bonus points so I immediately went to thinking about what I could make. That’s where these adorable Chocolate Covered Apple Slices come from! I hope you have as much fun making them as I did, I can’t wait to whip up a fresh batch just in time for Valentine’s Day in a few weeks.

For this recipe you will need: Apples, milk chocolate, coconut flakes, sprinkles, candy coated chocolates, large bamboo skewers and heart shaped cookie cutters.
