Nothing says Fall like the scrumptious scent of Pumpkin Muffins wafting from the kitchen while the sun bursts through your open windows allowing a crisp breeze to take you away to another place…ahh how I love this season! I couldn’t think of a better thing to do with my day off this week than do what I love the most…BAKE! Which is why I am sharing with you guys my delicious and easy Pumpkin Muffin Recipe!

Remember those Pumpkin Scones we made the other week? Well, I wanted to make that Spiced Cream Cheese Frosting again which is why I decided to pull out another pumpkin recipe for you guys to enjoy! The muffins are so fluffy and full of flavor on their own, but after topping them with the spiced icing…O-M-G you guys will never believe how wonderfully the flavors mesh! Just look at how gorgeous they are:

I seriously love this recipe! And, like most of my recipes, it is versatile!! You can add chopped nuts, candied pumpkin seeds, cranberries…you name it! Just think of how lovely these would be after a giant Thanksgiving dinner!! I mean…if you want to share them you can bring them along, or just keep them un-iced in a sealed container to enjoy over the course of the week (you know when you are ripping your hair out from all that stress that comes with planning and executing a holiday meal)! But not to worry, over the next week or two I will be getting you guys ready for Thanksgiving with everything from your main meal to side dishes and of course yummy desserts!

Pumpkin Muffin Recipe with Spiced Cream Cheese Frosting

Ingredients

Muffins

  • 2 c Flour
  • 1/2 c Margarine you can use butter if you prefer but this works just fine!
  • 1/2 c Brown Sugar
  • 1/2 c Granulated Sugar
  • 1 C Pumpkin Puree NOT spiced pie filling!
  • 2 Lg Eggs
  • 1 tsp Vanilla
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/4 tsp Nutmeg
  • 1 1/2 tsp Cinnamon
  • 1/8 tsp Ground Cloves
  • Pinch of Salt

Icing

  • 1/4 c Butter
  • 1/2 Brick of Cream Cheese
  • 1 3/4 c Powdered Sugar confectioners sugar
  • 1 tsp Vanilla
  • 3 tsp Milk
  • 1/4 tsp Cinnamon
  • 1/8 tsp Nutmeg
  • Pinch of Ground Cloves less than 1/8 tsp
  • Pinch of Salt

Instructions

  1. Preheat oven to 350 and line a muffin tin with 12 muffin liners
  2. In stand mixer cream together margarine with sugars until light and fluffy. Add in pumpkin puree, eggs and vanilla and beat on medium-high until mixed together.
  3. In a separate bowl, sift together dry ingredients (flour, baking soda, baking powder, spices, and salt). Slowly add to the wet ingredients and mix until just combined.
  4. Fill muffin cups (all the way if you want a nice fluffy and full muffin!) and cook for 22 minutes (until a toothpick comes out clean).
  5. Remove and allow to cool.
  6. In the meantime, cream together butter and cream cheese with powdered sugar until a creamy paste forms. Add in milk and beat until thick and creamy. Beat in the vanilla and spices and mix well until fully combined.
  7. Once the muffins have cooled completely you can ice and enjoy (or place in a sealed container for up to one week and ice when ready to eat!).

Tips and Tricks for the perfect pumpkin muffin every time!

  • Do not over mix your batter, once you add your dry ingredients you want to mix until just combined…this will keep them fluffy and light!
  • Be sure to sift your dry ingredients before adding them to the wet, this ensures you don’t end up with clumps of baking soda all in one bite.
  • Use a cookie scoop to fill muffin liners and prevent a sticky mess on the pan that will burn in the oven! This also makes sure you have the same amount in each cup, which means even cooking times!
  • Allow your muffins to cool COMPLETELY  before icing them, otherwise the icing will just melt off.
  • You can freeze these (and most muffins) in a tightly sealed container so you can ice and enjoy them later! No need to wait until the day before a holiday to make all the components of your meal! Make what you can ahead and enjoy a glass of wine instead!

Foodie Friday- Cinnamon Rolls!!

Foodie Friday is back! This is our first one for 2016 and I thought I would finally share those Cinnamon Rolls I keep bragging about! You guys are going to <3 them!

They may seem a little intimidating by the list of ingredients, but trust me, 90% of it you have in your cupboards RIGHT NOW! The nice thing about them is that you make them the day before, so if you have a special event coming up or a Sunday guest, you can make them and forget about them!

I’ll keep it short so you can stop drooling…wipe it up from your keyboard will you?! Enjoy these my friends!

 

Happy New Year!

Back to reality…2016 has been here for a couple of weeks now, the snow is piling up outside and my hands are itching to get back in the kitchen and make some goodies to post for ya’ll to enjoy!

This year I decided not to make any “silly” resolutions like, I’m going to lose 20 pounds by February…or, I’m going to workout two times a day and fit into my honeymoon bikini (from 5 years ago!) and instead am choosing more grounded resolutions that I know I can achieve! Things like, I will take the time to do 5 minutes of deep breathing today, or I will stop and appreciate the nature around me at least once a day! Another huge one for me this year is to take the time I need to relax and de-stress to help lower my everyday anxiety…something that is going to be so much easier thanks to my family for getting me a large selection of adult colouring books for Christmas! I was so excited with each one I opened as I could just feel my stress melting away before even picking up a marker (I’ll post up some pictures once I get a few more done!). This is not to bash anyone who is doing the weight-loss resolutions, in fact, more power to you! I have just realized over the years that this is not one I stick to, and come December 31st I am depressed at the lack of achievements.

With that being said…I have a delicious Chocolate Peanut Butter Cake that I want to share with you! I made this the other week for our Ukrainian Christmas get together with my dad, and it was a yummy hit!

Jam Filled Thimble Cookies

Christmas Baking Frenzy- Day 6!!

Okay, so I have done a couple days in a row with chocolate as the main star…so today I am going to switch it back to a classic Christmas cookie in our house! In fact, as far back as I can remember my mom would make these every year with different jams for every pallet.

So what is it I’m talking about?! The Classic Thimble Cookie of course! This really is a lovely cookie to make, and can be enjoyed any time of the year. It is a nice and light dough that gets rolled in crushed walnuts and topped with a jam dollop of your choice. Mmm, could it get any better?! This cookie is so darn easy to make but looks like you spent hours getting them “just right”, their addition to your Christmas Cookie line up will be welcomed with open arms by even the most judgmental family members.

Also on today’s post you will find gift ideas for the service people in your life (i.e. mailperson, hairdresser, banker, caretaker, favourite retail cashier). They are the ones you never really get the chance to thank on a regular basis and these small gestures will leave them smiling long into the new year!

Christmas Baking Frenzy- Day 4!!

Oh boy oh boy!! I think you guys are going to like today’s goodie!! It was a new one for us, and after testing the recipe out for you guys I have some suggestions to make it even better! Are you ready???

Nutella Fudge with Pistachios! Oh man, I told you it was a good one! The first of 2 fudge recipes that will be featured on the 13 days for you guys to enjoy. It was a really easy one to make, and tastes even better than it sounds…is that even possible? It took almost no time to make, and it is one of the nicest looking things you will put on your trays, as the pistachios and sprinkled sea salt give it such a glamorous look!

Also on the post today you will find a few gift ideas for the Dog (or dog lover) on your list!!! My girl gets spoiled every year from us and her “aunties and uncles” and let me tell you, she gets the same look as a little kid on Christmas morning!
