Delicious Gingerbread Biscotti Recipe

It’s that time of year friends, our Christmas Baking Frenzy is back for it’s 3rd year and I am so excited to get started! I am also participating in an online cookie swap with Houseful of Cookies and really wanted to think of a special cookie I knew everyone would enjoy and that would really make you think of Christmas…so here it is,  my Gingerbread Biscotti. It tastes just like a gingerbread cookie with the crunchiness of a good biscotti and of course is drizzled with a little white chocolate to add a hint of sweetness for dipping in your favorite cup of coffee or tea!

I don’t know about you, but when I think of the holidays I always think of the smell of gingerbread and the times I spent assembling the pre-made house kits as a kid…or should I say the time I spent eating half of the bagged candies that came with the kit and slopping together the house with whatever I had left (hey we’ve all been there right!). If you have never made a biscotti before, do not worry, I got you!  The most important thing about making your Gingerbread Biscotti is to really watch the time, in fact you should always use a timerALWAYS! Now, dust off your Christmas apron and get ready friends, we are just getting started!

Delicious Gingerbread Biscotti Recipe

Prep Time: 10 minutes

Cook Time: 30 minutes

Yield: 48 cookies

Delicious Gingerbread Biscotti Recipe

Ingredients

  • 2 1/4 c Flour
  • 1 1/4 c Brown Sugar
  • 2 tsp Ground Ginger
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Cloves
  • 1/4 tsp Allspice
  • 1 1/4 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/8 tsp Nutmeg
  • 1/4 tsp salt
  • 1/3 c Butter (softened)
  • 2 Eggs
  • 2 tbsp Molasses
  • 1/2 tsp Vanilla
  • 1/2 c White Chocolate (optional, for dipping/drizzle)

Instructions

  1. Preheat oven to 350 F and line two cookie sheets with parchment paper or silicone baking sheets.
  2. In your mixer cream together butter with sugar.
  3. In a small bowl whisk your eggs and molasses then add to butter mixture with vanilla and combine.
  4. In a medium bowl sift together your dry ingredients and then add slowly to your wet mixture (it will become a thick batter).
  5. Form into logs (10"x 2" approx) and bake for 20-23 minutes (until slightly firm to the touch but NOT hard, should have a "spring" to it)
  6. Remove from oven and cool 10 minutes before cutting into 1" stripes (see photos)
  7. Place face down on baking sheet and bake for additional 6, flip and repeat for 6 minutes (they should be slightly golden)
  8. Allow to cool completely before adding a chocolate drizzle/dip if you prefer!

Notes

If you like your biscotti REALLY crunchy you can add 1-2 minutes per side when they are cooking face down, if you prefer it a little softer you can do it for less time. Our biscotti is cooked to be a perfect addition to a cup of coffee or tea!

Ooo time for another favorite from my Cookie Vault!!! These Brownie “Biscotti” are so incredibly easy to make and will satisfy any chocolate lover. While the name may trick you, these cookies don’t require multiple flips and turns in the oven and are actually soft and ooey on the inside, loaded with chocolate and pecans…simply delicious!

This is one classic cookie I promise you will make year after year, and if you want a recommendation...make a double or even triple batch as everyone loves this Brownie Biscotti and it will be the first cookie gone from your trays!

White Chocolate Cranberry Biscotti – Day 3

This White Chocolate Cranberry Biscotti cookie recipe is full of so much goodness! It is perfect with a cup of coffee, or as a late night snack...the flavors combine everything we love about the Holidays, and hope you enjoy too!

This is one of our FAVORITE cookies to make at Christmas time!!! It takes a little bit more time than most of our other cookies, but trust me they are more than worth it! These Biscotti are loaded with cranberries and almonds, with a hint of white chocolate and even orange juice (Mmm, I know right?!).

Now, like the rest of our Christmas Baking Frenzy cookies, these Biscotti are perfect for adding to a goodie tray for a friend or neighbor, and are even gorgeous on their own in a simple mug as a teachers gift! (Or you could save them all for yourself…we won’t tell!). Be sure to make a double batch, these freeze great and will hold up to 3 months (in a sealed airtight container)!

White Chocolate Cranberry Biscotti

White Chocolate Cranberry Biscotti

Ingredients

  • 1/2 c Butter (softened)
  • 1 1/2 c Sugar
  • 3 lg Eggs
  • 3 squares White Bakers Chocolate (melted and cooled)
  • 2 3/4 c Flour
  • 2 1/2 tsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Almond Extract
  • 1/4 c Orange Juice (no pulp)
  • 1/2 c Toasted, chopped Almonds (we use slivered, you can use whole and chop more)
  • 1/2 c Dried Cranberries (rough chopped)

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In stand mixer beat butter and sugar until light and fluffy.
  3. In a small bowl sift together flour, baking powder and salt, add to wet mixture and mix well.
  4. Add orange juice and extract, beating until well combined. Stir in chopped almonds and cranberries.
  5. Divide dough in half, place each half on a lightly greased and floured baking sheet and shape into a 9"x 2" "log" (see photos)
  6. Bake 25 minutes, until golden brown. Remove from oven and let cool 10 mins. Cut each log into about 12 3/4" slices, place cut side down on baking sheet and bake an additional 15-20 minutes (turn over halfway through) and remove once each side is lightly golden
  7. *Make sure to check halfway through as each oven is different and you do not want them to burn
  8. Once cooled you can drizzle with semi-sweet or white chocolate!

Christmas Baking Frenzy- Day 5!!

How about that fudge from yesterday? Every time I think about it I want to sneak down to my freezer where all these goodies are being stored and sneak a couple of pieces out of the tin…but if I did that there wouldn’t be any left for my cookie trays!! I just wanted to share with ya’ll a photo from our full day bake-fest so you could see how many delicious treats were made that day (and perhaps get a look at some of the treats coming up)!

I am so happy to read your comments everyday about the posts, and love hearing from you when you have made one of the goodies, it makes the posts worth it knowing that someone is getting a new treat to add to their list!

So, for today, ya’ll will be enjoying a yummy Brownie Biscotti! Don’t fret my friends, this is NOTHING like your usual biscotti and is very simple to make! It has a nice gooey center (like a brownie) but the shape of a biscotti. With the addition of some chopped pecans (or nuts you prefer) and a drizzle of white chocolate, this is going to be one of the BIGGEST hits on your Christmas trays! I have made this one for about 10 years now (wow!) and every year I get more and more compliments, and have even had an entire fresh batch eaten from right under my watchful eye while family from the West Coast was visiting (that just SHOWS how yummy these are).

Also on today’s post you will find gift ideas for the gardener on your list! That can be anyone really! If they aren’t a gardener yet I am sure that a couple of my ideas will make them want to be!
