Foodie Friday Easter Edition!

Happy Easter everybody! I hope you get to take some time to spend with your loved ones over the next couple of days and fill your tummies with delicious meals!

Today I am sharing with you a yummy dish you can prepare ahead of time to enjoy through the week, and by making simple adjustments you can get multiple meals from it! It all started with an excess of chicken thighs in the fridge and my hubby telling me he didn’t want the “usual” chicken dishes we make…oh boy! I accepted the challenge and by the time he got home that night I had a hearty, simple meal on the table (which was gobbled up quicker than clean-up)!

The nice thing about this dish is that you can change it up a bit if you don’t have all the ingredients on hand, and can really customize it to your picky eaters. A nice Hearty Chicken and Dumplings (with my own little cheats for time) is exactly what you need to transition you from this cold winter weather to the freshness of Spring!

I hope you enjoy it as much as we did (and by we, I not only mean me and my hubby but also my mom and a colleague who I shared the leftovers with…that’s how big this recipe is!). Nom Nom Nom!

Foodie Friday~ Creamy Carbonara

Oh here we go!! Spring in the air calls for a classic Pasta Carbonara…a yummy pasta dish with bacon, cheese, eggs, and peas (well in MY version anyway!). It is probably one of the easiest pasta dishes to make and it tastes like you spent hours making it! Sooo much flavour in only 15 minutes of time.

Many people may shy away from it because of the “raw” egg factor, but I promise you they cook once they hit the steaming pasta and hot bacon mixture! It is sure to be a yummy hit for your family this weekend, and like I said it only takes 15 minutes from START to FINISH (what could be better!).

Foodie Friday- Sweet and Spicy Stir Fry

*A day early…YIPPIE!!!*

 

Hey ya’ll!! I am so sorry I was unable to post last week (or even give an update)! We were in the process of having our services switched over and were without our WiFi for a couple of days. On a positive note, we are saving soooo much money a month from this one little switch…*hint* it includes an Android box!!

Ok, enough with the boring stuff (maybe I’ll post up about it in a couple of weeks), but for today we will be making my Sweet and Spicy Stir Fry…Mmm Mmm! I whipped this one up using things I had in the pantry already, mixing the sweet and spicy to create a dish that both me and my hubby loved! Thankfully when I make meals I always make more than I know we will eat in one sitting, it lets us devour the dishes we LOVE, and saves some for lunches the next day! Win win!

Feeling a Little “Chili”?

I don’t know about you guys, but I CAN’T believe that it is November already! That means it is only going to get colder, and with the sun setting earlier we are going to start feeling those winter blahs soon enough. Christmas decor and gift ideas will soon be filling all the store shelves, and snow will be making our drives a little bit longer and a lot more stressful.

Lucky for you I recently decided to be a little more adventurous with a classic recipeĀ  and created the most delicious Chicken Tortilla Chili! It is sure to be a new family favourite for the cold nights ahead, and you can even make it in the crockpot so it’s ready when you get home.

There are a few shortcuts you can take if you are running low on time (or patience) and with just a few simple ingredients it won’t break the bank. It makes a heaping pot of chili, more than enough to feed a family of 4 at least two times…see the recipe for my spin on what to do with the leftovers for a fun family meal the next day!

Hey everyone! Sorry this edition of “Foodie Friday” is a couple of days late! Last week was slightly crazy for us…in fact, the craziness is still continuing! As I type this there are three men in my kitchen installing new granite counter tops. Anyway, for this weeks dish I wanted to bring you something that was as quick as it is delicious!!

I was thinking, with these super cold days we have been having (we had SNOW yesterday!) I wanted to share with you something that was stick to your ribs, fill your tummy good, and loaded with vegetables! So friends, this week you will be shown how to make my very tasty Chicken Pot Pie.

Thanksgiving is upon us!

I can’t believe that it is already Thanksgiving weekend! This calls for a special edition of Foodie Friday! This week I am showing you two easy sides to dress up your bland Thanksgiving table…I know that sounds offensive, but really let me take a stab at it here.

Every year you have a giant delicious turkey in the middle of your table surrounded by what? Mashed potatoes, corn, stuffing, gravy, parsnips and maybe some carrots…am I right? Do you see the colour scheme there!? Now, if cranberry sauce is the only thing adding colour to your Thanksgiving table this post is for you!

I made two dishes for you to take to your dinner and really impress the family…this is especially good for all you newlyweds still trying to make an impression on the in-laws! The first is a Sauteed Brussel Sprout dish with Pancetta and the second is a delicious Kale with Cranberries and Toasted Pecans…mmm!
