Top 5 Recipes of 2016 – Cake, Cookies and MORE

What a year 2016 was!!! It was such a roller coaster year for me, in both my personal and professional life, but there is one thing that stayed constant for me and that is THIS BLOG! I love being able to share with you guys so many delicious meals, snacks, treats etc! And from what I can tell, you guys LOVED it too!

I decided to participate in a “Round-Up” of sorts, with some of my fellow bloggers so we could see what our most popular recipes of 2016 were and share them with you guys in one fun place! This cookie was our most POPULAR post last year and with good reason too!!! It is such a simple yet flavorful cookie that literally melts in your mouth, and it’s perfect for any time of year (but featured for our Christmas Baking Frenzy).

This is by far my favorite dinner recipe up on the blog, so it is no surprise to me that it came in as one of the top 5 from last year!! It is so EASY and TASTY and inexpensive (with the use of ground beef) that it is a perfect meal for any night of the week.

Mmm…that is all I need to say about this one! What a SPECIAL treat to make for birthdays, holidays, dinner parties etc. It is swirled with chocolate and peanut butter batters to create a heavenly cake that everyone will love. Best enjoyed with others so you don’t eat the whole thing!

How to Plan the Perfect Picnic (with free printable checklist)

I am so excited to share this post with you guys! If there is one thing I firmly believe you MUST do every single summer, it is a picnic! They are so fun and laid back, easy to plan, and filled with delicious food and treats…is there anything I mentioned that doesn’t sound appealing to you!? Nope…didn’t think so!

One thing I love most about a picnic (besides the food and time spent outdoors) is that you can go solo, with your special someone or even in a large group! They can be as intimate or as big as you want them to be, and will create endless memories that you can look back on year after year. I can still tell you about some of the picnics I had growing up, and the first picnic my now hubby and I had…oh was that a good one! We were in a gorgeous park in the town where he grew up, we ordered Thai food from our favourite place and sprawled out on the grass under a tree (that must have been 100 years old). We spent the entire afternoon laughing and sharing stories while indulging in all that nature had to offer us. It is probably at the top of my list for dates with my favourite man…oh the good ol’ days!

I am going to share some tips and tricks for a perfect picnic, and give you great food ideas for anyone’s picky tastes! Don’t know where to go for your picnic? Foodie Friday~ 5 Star Fluffy Pancakes

Happy LONG weekend friends!! Ohhh what BEAUTIFUL weather mother nature has in store for us…I don’t remember the last Victoria Day long weekend where we actually had all 3 days full of sunshine and heat!

I am so excited it is the long weekend that I decided to share with ya’ll my super secret 5 Star Fluffy Pancake recipe 🙂 I mean, what better time to make pancakes than a long weekend right? Lazy mornings, late nights and days full of sun and fun. This really is the perfect recipe for a pancake, it is so light and fluffy and when made my hubbies way it is full of yummy secrets (click the recipe for his boozy version Mmm).

My plans for the weekend are simple…sleep in, and stay up late enjoying the time with my hubby and my beautiful pup Tehya <3 I start a new job next week (eeek) so I will need to be well rested and ready to go for all the new adventures life has given me! Foodie Friday (ish)~ Sparkling Unicorn

Ohh what lovely weather we are having, I am addicted to this sunshine (even though I know it won’t last…rain is in our near future). I had to share this post a day early, that way you can make sure you have everything you need to MAKE IT!

This past weekend was mothers day and I decided to host my momma and sister for an afternoon brunch, loaded with yummy food and a super tasty new drink!

Honestly is there a better way to show someone you appreciate them? I mean…food and DRINKS!?  It was such a giant hit that I brought all the stuff to make them again the next day for lunch with my in-laws…again, LOVED by everyone! Gosh I just love when a new recipe takes off with success, I cannot wait to restock some of my ingredients so I can make it again all summer (and I am already thinking of great variations!).

Sooo, let’s start with a shot of our yummy brunch…

Yup, Eggs Benny with peameal bacon and a nice side of steamed asparagus…also notice the tasty cup of fruit to freshen our palates…mmm take me back!

Okay, okay…so what is this Sparkling Unicorn I speak of?

I bet I know exactly what you are thinking…What on EARTH are those red things in the drink?! We will get to that…for now all you need to know is that it is a 3 ingredient drink that you can enjoy all summer! It is so incredibly light (and fizzy) and is super refreshing. We all had a second glass (or more…) that’s how yummy it is! And if you don’t like a boozy drink than this is DEFINITELY  for you! You can’t taste the alcohol in it at all! Uh-Oh!

Foodie Friday- Cake Pops!!

How fun and cute are these?! I loveeee making cake pops, and have officially  crowned myself the cake-pop-queen of the family (I swear my ego is only slightly bloated) 🙂 I am often asked to make my cake pops for the events in our families, which is why I have deemed myself so!

When I first started making them I used one of those “Cake Pop Pans”…now, STOP right there! DO NOT go out and buy yourself one of these! My cake pops were huge, although uniform in size, and often quite dry…because you are restricted with the pan as far as how much batter to put in each mold I found it just wasn’t meeting my standards. So I set off on making them by hand! Sounds daunting right?? WRONG! The hardest part about making the cake pops is picking what colour chocolate you want to coat them in, I promise!

The best thing too is that you can use a boxed cake mix and store bought icing, so really all you have to do is cook em and decorate! EASY! You can get super creative with them too, if you want, or keep them simple like I tend to. On one occasion I made Toy Story themed cake pops for my nephews 5th birthday, and although super difficult to do, the look on his face was more than worth it!

I will suggest to you, if you will be making them often, to invest in a nice cake pop stand…I started out using floral foam and covering it in wrapping paper to match the occasion, but let me tell you that stuff aint cheap! My cake pop stand was around $10 and is super cute (as you’ll see in the post).

Foodie Friday- Delicious Coconut Cream Pie!

Ohhh my word, THIS pie!!! I decided to make this for our family Easter dinner (both families…so I made it twice!) as I wanted to try something different than my usual chocolate desserts…and I really wanted to make it from scratch! I have made a Coconut Cream Pie before using one of those boxed mixes for the filling, which was WAY too SWEET, and I knew that I wanted a pie with a creamy coconut filling that wasn’t artificial tasting.

So my friends, I present to you, the ultra dreamy and creamy Coconut Cream Pie!!! It was devoured by both our families (thank God as I really didn’t want any leftovers to fill my tummy!!) and was really quite simple to make. The most difficult part of this pie is not eating all the custard filling before it makes it into the pie shell 🙂

Foodie Friday- Classic Oatmeal Cookie with a Twist

Who’s ready for the weekend?! I am, I am!! I have been sick all week with my “yearly” cold/flu and it’s a bad one! So bad in fact that I have missed two days of work and am really not looking forward to going back tomorrow seeing as how I still feel like a zombie! But, enough about sickness and more about this COOKIE!

You likely have everything you need to make this one right now…how perfect for the cold weekend ahead! You can bake em up tonight and enjoy them over the next two days with your morning cup of tea. I usually make these cookies with chocolate chips but this time I had some nice dried cranberries left from my Christmas baking so I thought I’d throw those in instead…you can really add in whatever suits your taste or occasion (try hard shell chocolate eggs for Easter)!!

So go get your sifters ready and prepare yourself this delicious Oatmeal Cookie NOW!

Foodie Friday- Cinnamon Rolls!!

Foodie Friday is back! This is our first one for 2016 and I thought I would finally share those Cinnamon Rolls I keep bragging about! You guys are going to <3 them!

They may seem a little intimidating by the list of ingredients, but trust me, 90% of it you have in your cupboards RIGHT NOW! The nice thing about them is that you make them the day before, so if you have a special event coming up or a Sunday guest, you can make them and forget about them!

I’ll keep it short so you can stop drooling…wipe it up from your keyboard will you?! Enjoy these my friends!

Happy New Year!

Back to reality…2016 has been here for a couple of weeks now, the snow is piling up outside and my hands are itching to get back in the kitchen and make some goodies to post for ya’ll to enjoy!

This year I decided not to make any “silly” resolutions like, I’m going to lose 20 pounds by February…or, I’m going to workout two times a day and fit into my honeymoon bikini (from 5 years ago!) and instead am choosing more grounded resolutions that I know I can achieve! Things like, I will take the time to do 5 minutes of deep breathing today, or I will stop and appreciate the nature around me at least once a day! Another huge one for me this year is to take the time I need to relax and de-stress to help lower my everyday anxiety…something that is going to be so much easier thanks to my family for getting me a large selection of adult colouring books for Christmas! I was so excited with each one I opened as I could just feel my stress melting away before even picking up a marker (I’ll post up some pictures once I get a few more done!). This is not to bash anyone who is doing the weight-loss resolutions, in fact, more power to you! I have just realized over the years that this is not one I stick to, and come December 31st I am depressed at the lack of achievements.

With that being said…I have a delicious Chocolate Peanut Butter Cake that I want to share with you! I made this the other week for our Ukrainian Christmas get together with my dad, and it was a yummy hit!

White Chocolate Cranberry Cookies

Christmas Baking Frenzy- Day 11!!

Wow, so hard to believe we have shared ten days of delicious goodies already! Are ya’ll enjoying it?!

Today we are updating a classic shortbread cookie with a White Chocolate Cranberry Drop cookie! Just typing this one out makes me hungry, I mean it has ALL the flavours I associate with Christmas in one delicious bite! It is a nice shortbread density with the freshness of the cranberries and sweetness of the white chocolate, and is another easy one to make (do you see the pattern here, EASY).
