Kale Pizza - Simple Pizza Recipe

A deliciously simple Pizza Recipe topped with Kale and Mozzarella to create a new family favorite for pizza night. Get creative and add toppings you love!

Ingredients

  • One good size bunch of kale cleaned and chopped
  • 3 garlic cloves sliced thin
  • 2 cups grated mozzarella cheese
  • 1 pizza dough you can make your own or use store bought! make sure it is at room temperature and ready to be worked!
  • 1/2 cup of cornmeal
  • 2-3 tbsp olive oil
  • 1/4 cup butter
  • A sprinkle of parsley/basil/oregano

Instructions

Kale Prep

  • You're going to start by soaking your kale in a sink of cool water for about ten minutes. This ensures all those little pieces of dirt rinse off and sink to the bottom rather than make their way onto your yummy pizza!
  • While your kale is soaking you can get your oven preheated to 475 F. Also, take a large skillet and get your butter melting at medium-high heat (this is to give a quick cook to the kale before putting it on the pizza)
  • Now that your pan is ready take your garlic and toss it in the butter with some salt until it is lightly browned (you do not want it cooked at this point). Add in your kale a little bit at a time, as it wilts down you can add the remainder! It may look like a lot to start, but it wilts down to about 1 cup when you are finished! Let the kale cook at medium-low heat for about 10 minutes or until it is wilted down and "soft" looking.

Assembly

  • Start by stretching out your dough on a cornmeal coated counter until it is about 1/4″ in thickness. Add additional cornmeal to your pan or stone to get that nice crunchy crust!
  • Now your layers! Lightly drizzle the dough with some olive oil (not too much as the kale has butter!). Sprinkle with your desired herbs, just enough to colour the surface. Add your kale evenly to the dough using a fork to pull it across. Lastly, cover the kale with your cheese so you can see green poking through.

Cooking

  • Place your pizza in the oven and bake until lightly golden around the edges (about 10 minutes). If you like a crispier crust feel free to go longer.

Notes

We use a pizza stone, but you can use a baking tray or pizza pan if you prefer that! I love the stone as it gets the crust nice and crunchy and helps to keep the heat in the oven for a higher cooking temperature!
