Classic Sugar Cookie

A classic sugar cookie recipe that you can decorate with royal icing for any time of year.

Ingredients

Cookie

  • 1 cup butter softened
  • 1 cup granulated sugar
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 1 egg
  • 2 tsp baking powder
  • 3 cups flour

For the icing

  • 3 tbsp meringue powder
  • 4 cups icing sugar
  • 5 tbsp warm water more if needed for consistency

Instructions

  • Preheat oven to 350 degrees Fahrenheit
  • In mixing bowl, cream butter and sugar until smooth. Beat in extracts and the egg.
  • In a separate bowl sift together your baking powder and flour. Add a little bit at a time to your wet ingredients. Mix until almost all combined.
  • Finish kneading dough with wet hands and divide into workable batches.
  • Roll out on a floured surface and cut with desired shapes (about 1/4" thick)
  • Bake at 350 for about 6-8 minutes (until edges are very light golden brown) allow to cool for 5 minutes before transferring to cooling racks.

Prepare icing

  • Beat all ingredients until icing forms peaks (7mins on low speed) add more warm water as needed for the consistency you like to work with!
  • Ice, decorate and enjoy!
