Easy Traditional Stuffing Recipe for the Holidays

This traditional stuffing recipe is a must have for any holiday meal! This simple recipe combines crusty bread with onions, celery and fragrant spices to create a mouth watering version of everyone’s favorite side dish.

Stuffing…mmm do I have your attention yet!? In our family, just the mention of stuffing gets our heads turning and noses sniffing, we are obsessed with it! In fact, when I make my Thanksgiving plate it goes something like this: Turkey (20%), Potatoes (5%), Veggies (10%), Cranberry Sauce (20%) and STUFFING (45%) and I am not even joking! I could eat just a plate of this Traditional Stuffing if I didn’t think my family would judge me.

Now I know there is a whole debate out there, to stuff the bird or not stuff the bird…and do you know what I say?! DO BOTH! That’s what we do! I make more than enough stuffing to go in the bird and have a full casserole dish on the side, and the best is to mix them together to really blow your taste buds away.

It isn’t the Holidays without Stuffing

Stuffing is probably one of the easiest sides you  will have to make for your dinner, and most of it can be assembled a day in advance to leave you with more time to focus on your turkey the day of.

We always buy a couple of fresh loaves of French Bread from our local bakery and I make an evening of getting my stuffing ready. I like to sit with a glass of wine and my favorite show on TV with a giant bowl beside me as I rip the bread into tiny pieces so it can sit out overnight and get nice and crusty (if you are in a time constraint that is OK too, just stick the bread in the oven for an additional 5 mins from my recipe and you will still have a perfect stuffing every single time!).

FAQ’s for Making Stuffing

Do you put Eggs in Stuffing?

While putting eggs in your stuffing is not necessary, they do create the binding you want to ensure your ingredients mix together to create a delicious addition to your turkey. Without the eggs your stuffing would really just be bread with seasoning as it wouldn’t hold together.

Can you Make Stuffing the Day Before?

YES! As we mention in above you can prep your stuffing right until the cooking stage to save yourself some serious time the day of your big meal. You can go so far as cooking it, however keep in mind you will likely need to add additional liquid (broth) the following day when reheating to make sure it doesn’t dry out.

Should I Cover Stuffing when Baking?

Yes, you want to always start by cooking your stuffing with foil or a cover on top to ensure it doesn’t overcook/brown too quickly. Once it has been in the oven for about 45 minutes we suggest taking the cover off and allowing it to cook another 30 minutes without the cover to let it get toasty and brown on top without drying it out.

Putting stuffing in the turkey is so much easier with a turkey stuffing bag, the juices from the turkey will coat, flavor and cook the stuffing and the bag easily pulls out when the turkey is done (so much easier than trying to scoop out all the good bits!).

Also, you NEED to have a fast read thermometer, you don’t want your oven open for long periods of time or you will lose all the heat. Check out our favorites below.

Okay, that’s enough blabbing on, let’s get started on this classic holiday dish. Keep in mind, as with most of my recipes, this one can easily be adapted for your tastes and preferences! If you like cranberries or pecans in your stuffing, add em in! Prefer whole wheat bread? No problem! Customizing a recipe is what makes it yours, so get creative and dig in.

  • 2 loaves French Bread will need about 15 c cubed
  • 2 medium Onions
  • 1 c Celery you can use 1/2 tsp celery seed if you don’t have any on hand
  • 1 tbsp Poultry Seasoning
  • 2 tbsp Rosemary dried
  • 1 tbsp Thyme
  • 1 1/4 c Butter unsalted
  • 2 lg Eggs
  • 2.5 c Vegetable Broth or chicken
  • Salt and Pepper

If prepping ahead of time:

  • Preheat oven to 300 F. In a large bowl, tear up your French Bread into small bite sized pieces. Spread onto cookie sheets in a single layer and place in the oven for 10 minutes, until lightly golden. Allow to cool completely and leave out overnight to continue the “staling” of the bread (if you don’t have time to leave out, keep the bread in the oven for an additional 5-10 minutes to dry out on day of).
  • Finely chop onions and celery, add to a medium pan over medium heat with 1c of the butter. Add in your herbs with a pinch of salt and pepper. Cook until onions are translucent. Remove from heat and allow to cool before placing in covered bowl in the fridge.

Day of:

  • Preheat oven to 350 F and butter (or spray) a 9″ x 13″ casserole dish, set aside.
  • In a medium pan reheat your onion mixture over medium heat (see above if making same day) and add 1.5 c of broth and allow to come to a low simmer.
  • Now in a large bowl, toss bread with your butter and broth mixture, be sure to combine well.
  • In a small bowl whisk your eggs with remaining broth (1 1/4 c) and add to the bread mixture.
  • Add bread mixture to your casserole dish, topping with remaining butter (cut into small cubes) and bake covered for 45 minutes. Uncover and bake for an additional 30 minutes (or until top is golden and slightly crispy). Serve warm and enjoy!

If you prefer fresh herbs you can use those too! We use dried since we always have them on hand, just make sure they are still good guys (we rotate our herbs/spices every 3-4 months since we use them so much!).
If you are going to add some of the stuffing to your Turkey, combine 4c bread with 1/4 of your onion and herb mixture, and stuff into the cavity of the bird. Don’t worry about your broth mixture, your butter on top of the casserole will help to keep everything moist.

Easy Homemade Cranberry Sauce

Incredibly easy homemade Cranberry Sauce that is bursting with flavor thanks to the added Amaretto which gives it a slight nutty aroma. It goes perfectly with your Thanksgiving turkey and makes a great hostess gift too!

If you have always wanted to try making your own Homemade Cranberry Sauce for the holidays but are terrified as to what it might entail…well here you go! A super EASY sauce that comes together in a few minutes with just a few simple ingredients. It is just as easy as opening a can of that molded jelly “sauce” you buy in the store and I promise you that the flavor is a thousand times better! And perhaps the best part? It uses frozen cranberries, which you can buy months in advance (Yay to no last minute grocery runs when you are trying to prep a meal for 20+ people!).

I love making my own sauce for a number of reasons. You can control the amount of sugar you put in it (if you want to do less sugar, add in some fresh orange juice) and you can really let your creative side shine too! In fact, we have quite the secret ingredient that goes into ours…which is always getting “ooooo” and “ahhhhh” from our family. Don’t worry, I will share it with you as well! Ready for the step-by-step on how to make this delicious Cranberry Sauce?

The one thing that you NEED to have to make this sauce a success is a good potato masher for making sure your cranberries are fully mashed into the right consistency.

  • 4 c Frozen Cranberries you can use fresh if preferred
  • 1 c Sugar white granulated
  • 1 c Water
  • 1/2 tsp Ground Cinnamon
  • 2 oz Amaretto almond liquor

  • In a medium saucepan combine sugar and water over medium heat. Allow to boil and add in liquor. Cook for about 2 minutes to “burn” off the alcohol. Add in cranberries and cinnamon and continue to gently simmer over medium heat, stirring occasionally to keep from burning.
  • Once cranberries begin to pop (about 5 minutes) you can gently mash and cook for another 3-5 minutes until the liquid dissolves and it begins to take on a jelly consistency.
  • Remove from heat and allow to cool before transferring to a sealed container. Refrigerate until ready to use (we make ours 2 days in advance!).
tips and tricks for the perfect cranberry sauce
  • Taste it as you go! If you like it more tart cut back on your sugar, and opposite if you like it sweeter!
  • Make it at least a day in advance, this will allow the sauce to cool to a nice consistency and give the flavors time to get stronger.
  • To get the nice chunky consistency use a potato masher and gently mash the cranberries as they cook.
  • Prefer a smooth sauce? No problem, once cooled add to a food processor or blender for 10 seconds to puree to a smooth and delicious spreadable sauce.
  • Get creative! We add Amaretto (almond liquor) to our sauce, but we have also added orange juice and zest in the past. You can take a small amount and add in different combinations of ingredients to see what you like best.

Cranberry Apple Pie Recipe- a new pie recipe for the Holidays that everyone will love! Sweet with a hint of tart, find the full recipe at theoliveblogger.com

When you think of a Pie Recipe for the Holidays you tend to lean towards Apple, Pumpkin, Pecan and maybe Lemon Meringue…but today I have for you a NEW favorite that will make an appearance at your table year after year. This Cranberry Apple Pie recipe combines the traditional flavors of an Apple Pie but adds in the tart Cranberries to make a statement that your taste buds won’t soon forget. I was trying to think of other uses for cranberries besides sauce or using it in the stuffing for my Pork Tenderloin I prepared for you guys the other week, and I thought why not use them in a dessert?

Just look at that delicious filling guys! It really takes little time to make the filling and if you have one of these funky Apple Peeling Gadgets it really saves you a ton of time and headaches (I have had mine for YEARS and it is just as good as the day I got it). The pie filling uses a handful ingredients and can be whipped up quickly, and it doesn’t require ANY cooking prior to going in the oven to bake…SWEET!

Now, for this pie I DID make my own crust…a nice Fall pie like this deserved its own homemade crust, however you CAN use store bought if you want it to be quicker! You can find my Homemade Pie Crust Recipe here, along with my tips and tricks for the perfect crust every time!  Check below for the full recipe and remember to save a slice for me!

  • 3-4 medium Apples peeled and sliced (I used 3 Cortland and 1 Gala)
  • 1 1/2 c Cranberries chopped (you can use frozen or fresh)
  • 1 c Brown Sugar
  • 2 tsp cornstarch
  • 1 tsp vanilla
  • 1 tsp Cinnamon
  • 1/4 tsp Ginger
  • 1 Pie Crust see pg for my homemade crust!
  • 1 egg yolk
  • pinch of Salt

  • Preheat oven to 375 degrees Fahrenheit.
  • If using frozen cranberries remove them from the freezer and allow to thaw for 1-2 hours.
  • Prepare pie crust and leave in fridge while you mix the pie filling.
  • Sift together your brown sugar, cornstarch, cinnamon, ginger and salt. Add vanilla and mix.
  • Add apples and cranberries to sugar mixture and combine thoroughly.
  • Add pie filling to your prepared crust and push down gently. If using my homemade crust you can add your top piece as a circle or cut into strips and weave like a lattice pattern (see photos).
  • Whisk egg yolk and using a pastry brush gently brush the entire outer pie shell (this will give it a nice golden crust as it bakes)
  • Bake pie on cookie sheet at 375 for about 20 minutes and then reduce heat to 350, bake until the apples are tender and crust is lightly brown (filling should be bubbling).

Here is one more just so you can see the full pie in all its delicious glory!

Pumpkin season is in full swing guys, whether you like it or not, there is no way around it! I used to HATE pumpkin anything, there wasn’t a single thing I would eat if it had pumpkin in it…In my opinion they were just to be used on Halloween for carving and throwing away the next day! That all changed when I started to cook for myself and was able to play with the flavors to create a “spice level” that I could tolerate. This Pumpkin Scone Recipe is so easy and delicious, and is covered in a simple Spiced Cream Cheese Frosting that you can use on a number of other seasonal treats. I will be trying my hand at some pumpkin muffins and perhaps an apple fritter loaf just so I can lick the frosting from the bowl  so I can bring you guys more delicious treats for my favorite Fall season!!

Just looking at them again makes me want to lick my screen…who’s with me?!

Now, the trick to these scones is really all in the making of the dough! You want to make sure you have everything ready to go ahead of time, no running back and forth trying to sort your ingredients! Don’t worry, we are all guilty of it! In fact, when I was remaking the recipe so I could update my photos I forgot the butter…LIKE HOW?! I had to start all over again and was exhausted by the time I was ready to take the photos! There have been too many times to count where I have had one part of a recipe ready and was throwing things in the fridge so I could run to the store for the 10 things I forgot (duh). Alright, ready for my tricks and tips for the perfect Pumpkin Scone Recipe!?

Tips and Tricks to the Perfect pumpkin scone

  • Cut your butter into cubes and put on a plate back into the fridge to keep cold until ready
  • Cover your countertop in plastic wrap (where you will be rolling the dough) trust me! And, if you don’t, check out my Overnight Cinnamon Rolls to see why!!
  • Pre-measure and sift your dry ingredients into a bowl
  • Use the regular pumpkin puree, NOT the spiced pie filling (or you will overdo it with the spice factor)
  • Start off with less spice if you prefer a light flavor (nutmeg, ginger, cloves) you can always add more but can’t take out
  • Do not shape your dough into a thin circle (trust me…they will burn!) keep it at 1″ for a nice and fluffy scone
  • Use a pizza cutter to cut your dough into even triangles (I am all about multipurpose tools in the kitchen)!
  • Place the scones into a sealed container (single layer) and put in the fridge to keep your icing fresh and yummy!

  • 2 1/4 c Flour AP
  • 1/2 c Granulated Sugar
  • 1 tbsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/2 tsp Ground Cloves
  • 1/4 tsp Nutmeg
  • 3/4 c Butter cubed and cold
  • 1/4 c Milk whatever you have on hand is fine, we used 1%
  • 1 Egg
  • 1.5 tsp Vanilla Extract
  • 1/2 c Pumpkin Puree NOT pie filling

  • 1/4 c Butter room temp
  • 1/2 brick Cream Cheese room temp
  • 1.5 c Powdered Sugar
  • 1 tsp Vanilla
  • 4 tsp Milk
  • 1/4 tsp Cinnamon
  • 1/8 tsp Nutmeg
  • pinch of ground cloves

  • Preheat your oven to 400 F and line a baking sheet with parchment paper (or baking mat).
  • In your stand mixer, combine your dry ingredients for the scones.
  • Add in your cold butter and mix on low speed until it combines with the dry to create small "pea" sized balls.
  • In a small bowl mix together your wet ingredients and add to your prepared butter/flour mixture.
  • Mix until just combined (any longer and they will not be fluffy)
  • On a floured surface form your mixture in a ball and flatten with your hand to create a medium circle that is about 1" thick.
  • Use a pizza cutter, or serrated knife, to cut into 8 scones, place on baking sheet and cook in oven for 15 minutes (they will be slightly golden around the edges).

  • In stand mixer, cream together butter and cream cheese until soft and smooth.
  • Add in sugar and spices and on low speed mix in the milk 1 tsp at a time until it reaches the consistency you are looking for (thicker for muffins and thinner for scones).

Well there you have it guys! The recipe makes 8 good size scones, we cut some of them down even smaller so we could have mini scones (which are perfect with your morning coffee or tea!). See the pics below to check out the consistency of the dough and how we cut them using a pizza cutter!
