Easy Corned Beef Dip Recipe

The perfect dip for celebrating St. Patrick’s Day, your next party and any other time you need a deliciously creamy dip for veggies! The crumbled corned beef is combined with fresh herbs, onions, sour cream and mayo to create a dip recipe that is unlike any you’ve had before.

We are always looking for new dip recipes for veggies since we entertain A LOT, and I realized that there really isn’t a specific dip that is meant for St. Patrick’s Day – or really many that use canned corned beef (a favorite of mine from childhood!).

If you are looking for easy and delicious then this is definitely the dip for you – it takes 5 minutes to put together and makes enough for a large event! Who doesn’t love a quick and easy recipe when you have a million other things to do and get ready?!

Easy Quinoa Salad Recipe with Lemon Vinaigrette

Summer is all about fresh ingredients and outdoor meals for us, that’s why this Quinoa Salad is perfect for the hot days that are still ahead! It uses just a few ingredients to transform plain quinoa into a delicious side dish (or main meal if you want to add protein!) and although we make this more in the summertime, you can definitely enjoy it on cooler days as well. Quinoa-Salad-Fresh-Ingredients


You can customize the Quinoa Salad to your tastes too, so if you prefer zucchini over cucumber or cherry tomatoes over peppers, feel free to throw em in. The dressing is just as simple as the salad itself, and can be used on a variety of green salads as well! So grab your ingredients and pack your picnic bag, it’s time to make this yummy salad.

Easy Quinoa Salad Recipe with Lemon Vinaigrette


  • 1 c Dry Quinoa Rinsed under cold water
  • 1 c Water
  • 1 c Vegetable Broth
  • 1/2 lg Cucumber chopped
  • 1 lg Red Pepper chopped
  • 1/2 Red Onion diced
  • 3 tbsp Fresh Basil or parsley if you prefer chopped
  • Salt


  • 1/4 c Extra Virgin Olive Oil the good stuff guys, you don't want it to be bitter!
  • 1/4 c Lemon Juice fresh is best but concentrated is fine!
  • 1 tbsp Dijon Mustard
  • 3/4 tbsp Sugar
  • 1 Garlic clove minced
  • pinch of Salt



  • Place medium pot over medium heat for about 2 mins to warm, add in quinoa and give a quick "toast" by swirling in the pot for 1 minute. Add in your water and broth with a pinch of salt and allow to come to a boil.
  • Reduce heat to low and simmer until liquid is absorbed (about 10-12 minutes). Remove from heat and place in your serving bowl. Place in fridge to cool.
  • Once quinoa has cooled add in remainder of the salad ingredients and toss.


  • Combine all ingredients in a small bowl, whisk until well combined.
  • Pour 1/2 of the dressing over the salad and add the remainder right before serving.


Prepare Quinoa ahead of time (even the day before) so it can cool.

Ok ya’ll, this is the BEST  salsa recipe and it is so unbelievably simple to make it will blow your mind! I know what you are thinking…”How can you make a basic salsa recipe better”…well let me tell you!

My hubby got himself a smoker last year and has been obsessed with finding new ways to make old favorites, and after talking with my cousin (who is also a very big smoker fan…hey Trev!) he decided he was going to try smoking some of the ingredients for our salsa. We were having our family over this past weekend for a summer BBQ, as we recently got a pool, and want to take advantage of every nice weather day we have (haha) we live in Canada after all…we only get a few months of nice weather! If you don’t have a smoker, don’t worry! There is a way around this, with the same results.

For this recipe you will need: hot house tomatoes, vidalia onion, cilantro, lime juice and kosher salt. 


Look at the blistering on that tomato…mmm!

I can’t tell you the amount of compliments this salsa recipe received, honestly I have to say I was a little shocked (you always expect someone to not like what you’ve made…well at least I do). I made a huge bowl (see below) and there wasn’t a single scoop left at the end of the party. Everyone commented on how incredible the light smoke flavor was, and the freshness of the ingredients really speak for themselves. You only need a few ingredients, most of which you probably already have on hand, and you are on your way to the most epic salsa that has ever hit your lips…I promise!


Okay, enough with the teasing shots of fresh ingredients, lets get this recipe started!

Smoked Summer Salsa Recipe

Smoked Summer Salsa is a fresh update on your usual salsa recipe! The ingredients are smoked first, adding delicious flavor to this classic favorite!

  • 4 Tomatoes Hot House
  • 1/2 med Vidalia Onion
  • 1 bunch Cilantro
  • 2 tsp Lime Juice
  • pinch Kosher Salt


  • Wash tomatoes and cilantro thoroughly
  • Preheat your smoker (or BBQ, see how to do it this way on the blog!) Place whole tomatoes and onion on the grill, leave to smoke for 30 mins
  • Allow tomatoes and onion to cool before chopping
  • Finely chop cilantro (about 1/2 of the bunch) and mix with tomatoes, onion and lime juice in a medium bowl. Add salt to taste.
  • Let sit in fridge for 1 hour before serving and serve with tortilla chips

So, remember how I said you didn’t need a smoker to make this salsa? Well, here is what you can do instead.

Use a small foil pan covered in foil and poked with holes (the ones from the dollar store work great) or Smoker Box made for your BBQ

You will also need Wood Chips  (there are a TON of flavors available)!

  • You place the the smoker box directly over an unlit burner (which requires you to lift the grill grate, then place the grate on top. Turn the BBQ on medium-low so it cooks at about 250 degrees Fahrenheit.
  • And “smoke” away! It only takes about 20-30 minutes for the tomatoes to begin to blister and the onions to soften. This is when you want to take them off and let them cool.
