The perfect dip for celebrating St. Patrick’s Day, your next party and any other time you need a deliciously creamy dip for veggies! The crumbled corned beef is combined with fresh herbs, onions, sour cream and mayo to create a dip recipe that is unlike any you’ve had before.
We are always looking for new dip recipes for veggies since we entertain A LOT, and I realized that there really isn’t a specific dip that is meant for St. Patrick’s Day – or really many that use canned corned beef (a favorite of mine from childhood!).
If you are looking for easy and delicious then this is definitely the dip for you – it takes 5 minutes to put together and makes enough for a large event!
Who doesn’t love a quick and easy recipe when you have a million other things to do and get ready?!
Party Food
Anyone who knows us knows that when we entertain we ALWAYS have to have a good variety and surplus of food for our guests to feast on – it’s just the way it is being married into an Italian family. Food = Happiness.
We start out by serving some of our favorites like our Smoked Salsa or Guacamole Dip alongside some hot apps and epic cheeseboards.
My mom has made a dip – we aptly called Ham Dip (so original I know) since I was a kid, but she only makes it at Christmas time… so I wanted to create a similar dip but update it for the Spring and that’s where this Herbed Corned Beef Dip comes in!
I promise you my friends that anyone you make this for will fall in love and beg for the recipe (which is why I am sharing it with you today!).

How do you make Corned Beef Dip?
Ready for how easy this dip is to make? Start by crumbling your canned corned beef using two forks. Rinse and chop fresh parsley and onion and add to the crumbled corned beef. Once this is done you simply add the mayo and sour cream along with the dill and stir to combine!
What do you serve with Dips?
What you choose to serve with your dip is going to depend on the type of dip you are making. For this dip we suggest a nice variety of crisp, fresh veggies like carrots, celery, peppers and cucumbers, along with crackers. If you are doing a warm dip like a spinach and artichoke dip I personally prefer tortilla chips or warm naan bread.

Entertaining is easiest when you are prepared and organized – this is especially true with what you are going to use to serve your dip with veggies/chips/crackers! I have a lazy Susan style server – it has multiple white dishes around a center bowl and the entire thing swivels which is AWESOME when you are putting out a big spread.
Corned Beef Party Dip Recipe
Delicious Corned Beef Dip
A creamy veggie dip that is full of crumbled corned beef, fresh herbs, and onions! Tons of flavor in little time, great for entertaining and game day.
Ingredients
- 1 cup Sour Cream
- 1 cup Mayonnaise
- 1 can Corned Beef, crumbled
- 1 med Onion, finely diced
- 1 handful Fresh Parsley (aprox 1/4c), chopped
- 2 tbsp Dried Dill, can use fresh if you prefer
Instructions
- In a medium bowl stir together the sour cream and mayonnaise until well combined.
- Add in crumbed corned beef with parsley, dill and onion. Mix well until fully combined.
- Serve cold with fresh veggies, crackers or tortilla chips.

How easy was that? I even recommend you make it a day in advance to let the flavors really develop together – we ate ours over the course of a couple nights while watching the basketball game!

I made this and it is fabulous. I would have never thought it would be so tasty. It is delicious. I did add about a cup or so of grated cheddar cheese and I used about 4 green onions instead. Wow, thank you!
