This French Toast Casserole is perhaps one of the easiest things you can make for a special weekend brunch – with a handful of ingredients you will have a flavorful dish ready in just 30 minutes! Brioche bread is what really makes this dish special, it is so fluffy and adds to the delicious texture in every bite.
I have made many variations of this Snickerdoodle French toast over the last couple of years, and I always circle back to this one when I want a really standout breakfast/brunch to enjoy.
The simple spices that mimic everyones favorite Christmas cookie along with freshly chopped berries and a hardy drizzle of real maple syrup (I am Canadian after all) will make you want to eat the entire thing yourself, and I won’t judge if you do!
Ingredients
As I said above, there is only a handful of ingredients you need to have on hand to make this, and here are a couple of quick tips to help make sure your French Toast Casserole is the best it can be the very first time!
Brioche Bread
While there are many different types of bread that can make a good French Toast (see my Peach Stuffed French Toast with Challah Bread) I highly suggest you go with the Brioche bread for this one. It is a nice soft textured bread and has a slightly more sweet flavor to it – which compliments the cinnamon and nutmeg.
Heavy Cream
I know what you’re thinking, can’t I just use milk? Why yes of course you can, BUT the addition of heavy cream (35%) in this recipe creates the most divine creaminess when mixed with the bread and eggs. Milk will work too, so if that is really all you have on hand than use it, just promise me you’ll give it a try with the heavy cream too!
Step-by-Step for making French Toast Casserole
- Cube Brioche bread and spread onto a baking sheet in a single layer – bake at 350F for 15 mins to dry out the bread (or cube and leave out overnight if you have time).
- Whisk eggs, cream, sugar, vanilla, and spices until combined in a large bowl.
- Add cubed brioche to the bowl and gently stir and fold to coat.
- Pour bread mixture into a greased 8″ cake pan and cover with foil. Add to your Instant Pot with a trivet and 1 cup of water.
- Set Instant Pot to high pressure for 30 minutes and cook. Once finished to a quick release on the pressure and serve topped with berries and maple syrup.
- Tip * put in oven on broil for 3-5 minutes to get a slight crisp to the top layer before adding fruit and syrup!

Snickerdoodle Brioche French Toast Casserole - Instant Pot Recipe
A delicious French Toast Casserole that reminds you of your favorite cookie - the Snickerdoodle spices combined with the Brioche bread make this a winning dish for weekend brunch!
Ingredients
- 1 400g loaf of brioche bread
- 1¼ cups heavy cream (35%)
- 2 teaspoons vanilla extract
- 6 large eggs
- ¼ cup brown sugar
- 1 ½ tablespoons cinnamon
- ¼ teaspoon nutmeg
- Optional - fresh berries & maple syrup for serving.
Instructions
- Cube brioche bread (about 1.5" size). If making the same day begin by preheating oven to 350F and place bread on baking sheet. Bake for 15 minutes to dry the bread out. If you want to do this step the night before you would simply set the cubed bread on the baking tray and leave out on the counter overnight to dry.
- Add eggs, vanilla, cream, cinnamon, nutmeg and brown sugar to a large bowl and whisk to fully combine.
- Add cubed bread to the egg mixture and gently mix to coat.
- Grease an 8" round pan and pour in French toast mixture. Cover with foil and set aside to prepare Instant Pot.
- Place a trivet into the bottom of your Instant pot and add 1 cup water to cover the bottom.
- Lower the prepared cake pan to your Instant Pot and seal properly. Set to high pressure for 30 minutes.
- Once the time is finished, do a quick release to release pressure. You can serve as is or by topping with fresh berries, powdered sugar and maple syrup!
- I also suggest taking an extra step and putting the French Toast Casserole under broil in your oven for 3 minutes to crisp the top layer!
