Banana brownies? Yes please!

I am a self proclaimed chocoholic as you will know if you have been following along with us for some time now, I could eat it for breakfast, lunch and dinner if that was an acceptable diet…still waiting for that one!

Now, as much as I love a classic gooey chocolate brownie recipe, like our Nutella Brownies, I knew that I had to up my game for our Mother’s Day post.

After all, we wanted to have a treat as special as your one-of-a-kind momma to help you celebrate her.

We all know that chocolate and bananas go together like peanut butter and jam and adding our simple maple buttercream on top was literally the icing on the brownie!

They are dense and chocolaty with a subtle hint of banana in each and every bite.

The great thing about these Banana Brownies is that they are really quite simple to make, aside from the time it takes to do the two separate batters, it is definitely a dessert that even a beginner baker could whip up.

Which means the kids can help with this one for sure!

Making Brownies FAQ

Is brownie batter supposed to be thick?

Yes! A good brownie batter will be nice smooth and thick and have a glossy shine to it.

The important thing with making your brownies is to make sure you do not over mix the batter, simply combine the ingredients until just incorporated.

Why are my brownies hard?

Simple answer, you’ve overcooked them! But don’t worry, we can fix this.

Thankfully our Banana Brownies are super moist each and every time because of the added bananas in the recipe, so you are likely to not run into this issue.

However, when making a regular chocolate brownie, like our Nutella Brownies, you want to make sure you pay close attention to the time they are in the oven and remove them as soon as a toothpick comes out “clean”.

Now I say clean with “” because a true brownie batter will never not leave any trace of chocolate on your toothpick, you will have some gooey chocolate chunks of course, you just want to make sure that the batter itself is not sticking to the toothpick.

Parchment paper is a must have item for baking these brownies, and many desserts/cookies. It helps to keep them from sticking from the pan and makes for a much easier clean up.

Our decadent Banana Brownies are filled with rich dark chocolate and topped with a buttercream maple frosting, making them perfectly moist and wonderfully sweet!

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes

Ingredients

Brownies

  • 3 Bananas, ripened.
  • 1 cup Butter, melted
  • 3 Eggs
  • 1 cup Sugar
  • 1 cup Flour
  • 1/2 cup Cocoa Powder
  • 1 tsp Vanilla
  • 100 g Dark Chocolate, chopped, we used Lindt Excellence 90% Cocoa

Frosting

  • 1 cup Butter, softened
  • 3 cups Powdered Sugar
  • 3 tbsp Maple Syrup, we used Pure Maple Syrup
  • 3 tbsp Milk
  • 1 cup Chopped Walnuts

Instructions

Brownies

  1. Preheat oven to 350 F and line a 9" square pan with parchment paper.
  2. In stand mixer mix together bananas with 1 egg, 1/2 cup sugar and 1/2 cup of butter until well combined. Add in 1/2 cup flour and mix until just incorporated.
  3. Remove from bowl (to smaller bowl) and set aside for after.
  4. In stand mixer mix together remaining butter (1/2 c), sugar (1/2 c), flour (1/2 c) eggs (2) and vanilla until well combined.
  5. Add in the cocoa powder and chopped chocolate and mix until just incorporated. Add first batter back to mixer with this one and mix until incorporated, do not over mix.
  6. Pour batter into prepared pan and bake for 25-30 minutes until a toothpick inserted comes out clean. *Remember there is chocolate chunks in the batter so it will still have streaks of chocolate on it!

Frosting

  1. Using a stand mixer (or hand mixer) beat butter on medium speed to ensure it is fully warmed up and whipped. Add in powdered sugar 1 cup at a time and mix well. Mix in Maple Syrup and combine, it will be fairly thick at this point.
  2. Add in milk and mix well, if your icing is still too thick you can add an additional 1 tbsp of milk until it is the consistency you prefer. Remember, you want it thick as it is to spread on top of the brownies and you don't want it dripping.
  3. Frost your brownies once they have cooled completely and top with walnuts (gently press them into the frosting so they don't fall off when cutting).

That frosting on the top is just amazing added bonus. Boy I can eat brownies and so many of them in one go even without frosting. With that frosting, boy it's going to be hard to stop eating. Delicious!
